Arbi Cutlets

Arbi or Colocasia root as it is known is one vegetable which I personally feel has limitations for cooking unlike potatoes. It is usually eaten in the fried form. Recently I happened to come across a Arbi curry recipe which I will surely try and add to my list later. As of now this is my go to recipe for making cutlets. These cutlets can be a great side dish with any vegetarian menu.

What do we need to make Arbi cutlets –

  • 250 grams Colocasia root (Arbi)
  • 1/4th cup Semolina (Rava)
  • 2 Green Chillies finely chopped
  • 1/2 inch finely chopped ginger
  • 1/2 tsp Cumin
  • 1/2 tsp Red Chilli powder
  • 1 tsp Turmeric powder
  • 1/2 tsp Coriander powder
  • 1/2 tsp Cumin powder
  • 1 tsp Garam Masala
  • 1/2 tsp Amchur powder
  • Finely chopped Coriander
  • Salt to taste
  • Oil for frying

Take 250gms Arbi and pressure cook it.

Once it cools, peel off the skin and mash it .

Add Rava, finely chopped chillies, red chilli powder, turmeric, ginger, cumin seeds, coriander, coriander and cumin powder, amchur powder, garam masala and some salt to taste.

Mix well and make small cutlets.

Heat a pan and add oil to shallow fry the cutlets.

Place the cutlets in the pan and fry them on both the sides till they turn golden brown.

Serve warm with coriander chutney.

You can adjust the chillies according to your taste.

You can also deep fry if you like.
