Haven’t posted a recipe in a long time. With all that is happening around , it has been very depressing last few months. Hearing about people dying and suffering everyday just makes it difficult to keep oneself positive. Recently my mother and sister had tested positive with the deadly virus. Hearing the very news made me numb. I couldn’t think anything for a while. There was this sudden fear of losing my loved ones and at the same time that feeling of helplessness as I was too far to even be there with them. Inspite of taking all the precautions they had tested positive. With mum developing complications she had to be admitted to the hospital while sister was isolating at home. Mum was in hospital for over a week and I cannot express in words what I went through. I am grateful to the almighty that mum recovered and got back home safely. But not all are as lucky as me. Many of my friends have lost their loved ones. It breaks my heart when I think of the pain they all would be going through. Nevertheless life has to go on and all we can do is to help those in need and stay healthy ourselves. Praying for all those who are struggling to survive and hoping for this pandemic to end soon 🙏🏻
Winters are almost here and with the cold and dull weather we need to keep ourselves fit and energetic. Hence made these guiltfree laddus as a healthy option to gobble.
Ingredients
1/4th cup Ghee
1/2 cup Almonds
1/2 cup Cashews
1/2 cup Walnuts
1/4th cup Pistachios
250 gms Dates
6/7 Dry figs
100 gms Makhana
1 Tbsp Flaxseeds
1/4th tsp Cardamom powder (optional)

Method:
1) Add 1 tbsp ghee to the pan and roast the Makhana for around 2 minutes till it turns crisp. Let it cool down to room temperature then grind it coarsely and keep aside.
2) Dry roast the Almonds, Cashews, Pistachios and Walnuts. Let them cool then coarsely grind them and keep aside.
3) Roast the flaxseeds for a minute then grind then into a fine powder. You can also add 1 tsp Chia seeds if you like.
4)Also grind the Dates and Figs into a smooth paste.
In a pan add the remaining ghee. Then add the Dates and fig paste to it and cook it for around 2 minutes. It will become soft and easy to be rolled with the Makhana dryfruit mix.
5) Add the Makhana powder, dryfruit powder along with the flaxseeds powder. Now add the cardamom powder and mix everything well. Roll the mix to make round balls. And your healthy and guiltfree Makhana Dryfruit Laddus are ready.
