Instant Rabdi

The authentic way of making Rabdi is a long procedure and takes hours to be done. Though I like the authentic way there are times when we are short of time and need a quick fix.This instant Rabdi is my go to recipe whenever I am short of time and has always been a hit.

Ingredients – 3 cups full fat milk

2 slices of fresh bread

1/2 cup sugar or condensed milk

Elaichi and dry fruits


1- Remove the brown sides of the bread and grind the bread in a mixie to make fresh bread crumbs.

2- Take a non stick pan and heat the milk. Make sure you keep stirring the milk to avoid it from burning.

3 – Add the fresh bread crumbs and sugar/condensed milk and stir continuously.

4 – Cook on a medium flame for about 10 minutes. Keep scrapping the sides and stirring it.

5 – After 10 minutes remove it from the flame. Let it cool down and keep it in the refrigerator for at least 2 hours.

6 – Add Elaichi and dry fruits of your choice and serve chilled.
